Kappo Tsan Announces MICHELIN-Star Executive Chef Stone Lin and Name Change to Kappo Sushi

Kappo Tsan in Orlando’s O-Town West is changing its name to Kappo Sushi and welcoming Chef Stone Lin as executive chef. Lin previously led Michelin-starred Natsu and worked at Soseki and New York’s Shuko. The restaurant will continue offering omakase at both the sushi bar and dining-room tables, with new menu details coming in the next few weeks.

Chef Toshi Kishimoto, former owner of Hanamizuki, will remain as chef de cuisine overseeing Japanese comfort-food dishes. Located at 11815 Glass House Lane, the restaurant opened in December 2025 and was recognized by the 2026 Michelin Guide.

Kappo Tsan Announces MICHELIN-Star Executive Chef Stone Lin and Name Change to Kappo Sushi

ORLANDO, FL — Kappo Tsan is entering a new chapter with the appointment of Chef Stone Lin as Executive Chef and a name change to Kappo Sushi, reflecting a renewed focus on the chef’s sushi and omakase expertise.

Formerly the chef behind Orlando’s Michelin-starred Natsu, Chef Stone Lin brings more than 15 years of experience working with Japanese cuisine to Kappo Sushi. His culinary background includes time at New York’s acclaimed Japanese restaurant Shuko and head sushi chef of Orlando’s 1-MICHELIN star Soseki, where he further developed his approach to sushi, seasonality, precision and omakase-style dining. At Natsu, Chef Stone led an intimate omakase experience that earned recognition from the 2024 and 2025 MICHELIN Guide, with the restaurant’s sushi and multi-course format becoming a defining part of his culinary career.

With Chef Stone stepping into the Executive Chef role, the restaurant will transition from Kappo Tsan to Kappo Sushi, a name that more directly reflects the direction of the restaurant and Chef Stone’s culinary background.

“I’m excited to build on what has already been created here and bring my own perspective to the restaurant,” said Chef Stone Lin. “For me, omakase is about creating a progression that feels thoughtful and personal, while allowing the ingredients to lead. I’m looking forward to sharing that experience with our guests in Orlando.”

Kappo Sushi will continue offering the Omakase experience at the sushi bar as well as at the tables in the dining room. 

Chef Toshi Kishimoto, who has led the kitchen since Kappo opened, will remain with the restaurant as Chef de Cuisine. With more than three decades of experience in Japanese cooking, including as the former owner of Hanamizuki, Chef Toshi will continue to oversee the restaurant’s Japanese comfort-food offerings and contribute his deep knowledge of traditional Japanese cuisine.

Kappo Sushi is located at 11815 Glass House Lane in Orlando’s O-Town West. The restaurant was recognized by the 2026 MICHELIN Guide following its opening in December 2025.
